We Won Silver!!!

The IFFA Sausage Competition was recently held at the University of Wisconsin from January 11 through January 15, 2016. This event was judged by the German Butchers' Association and the American Association of Meat Processors.

The Weeping Radish Butchery was awarded a Silver Medal for our Lunguica Sausage as well as a Silver Medal for our Cranberry Apple Pecan Sausage. What an honor given to our Butchery by our peers.

Trained by German Master Butchers, our team in the butchery crafts a wide variety of sausages and charcuterie. Our equipment is imported from Germany and designed especially for cooked and smoked products. The bowl cutter reaches over 8000 rpms to emulsify the meats and spices into the perfect blend. Our smoker is fully computerized and programmable for the most accurate timings of heat, smoke and humidity. We use hickory hardwood chips from the Virginia Mountains to achieve a light and flavorful smoke.

All of our products are free of sodium nitrate, fillers, colorants  and preservatives. The majority of them are gluten free as well. Like the brewery we have year round flavors, but new sausages and products arrive with the changing seasons.

Year Round Products:
  • Bratwurst – a traditional German specialty, a mild pork sausage
  • Beer Bratwurst – Bolder than the traditional bratwurst, the Beer Brat is made with our Black Radish beer and is a pork and beef blend
  • Apple Bratwurst – this pork sausage is made with fresh apples and is the perfect combination of sweet and savory
  • Andouille Sausage – our version of the Cajun classic, is a pork sausage full of spices with just the right amount of heat
  • Garlic Andouille – a blend of savory and spicy, an extra helping of garlic moderates the spice of the Andouille
  • Linguica – a Brazilian pork sausage, slightly coarse in texture, with strong paprika and onion flavors
  • Kielbasa – slightly milder than a traditional smoked Polish sausage, our version is a blend of pork and beef
  • Bacon & Onion Hot Dog – Every bit as good as it sounds! A pork hot dog filled with bold spices, sautéed onions and crispy bacon
  • Sweet Potato Liverwurst – Perhaps our most notable product, we use use pork and pork liver to create a rich savory flavor that is perfectly balanced by the lightness of the sweet potatoes

Several local establishments have now also taken advantage of our delivery system and buy cooked and smoked products directly from the butchery. This makes our brightly colored delivery van even more unique: As far as we know, the Weeping Radish is the only Beer and Brat delivery service in the Nation!
